Vegan Beer Battered Fish & Chips

I love beer and I love pub-style food, the two usually go hand-in-hand don't they? But what happens when I mix the two, and take this fishy favorite to a world of meatless? Well a magical meal that features a weird vegetable that you would never think would make an awesome vegan fish alternative.

Ingredients
"Fish"
  • 1 large long eggplant
  • 1 ½   tsp kelp granules, milled to a powder
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 2-3 cups vegetable broth
Beer Batter
  • 1 (12-ounce) bottle beer
  • 1½ cups organic all-purpose flour
  • ½ cup organic all-purpose flour, reserved
  • 1 tsp kelp granules
  • ¼ tsp pepper
  • 1 tsp salt
  • 1 tsp garlic powder
Instructions
"Fish"
  1. In a long casserole dish, mix together kelp granules, broth, lemon juice, and garlic powder whisk until smooth.
  2. Cut the eggplant into ½ in thin fillet shapes (length-wise).  Add them to the casserole, ensuring that they are completely covered with broth mixture. Let the eggplant marinate for 3-5 hours.
Beer Batter
  1. Heat oil to 375 degrees F in a large pot or deep fryer. And preheat your oven to 225 degrees F.
  2. In a large bowl, pour in 1 bottle of beer. Sift 1½ cups flour into the bowl, whisking in gently until just combined, stir in spices.
The Finished Product
  1. Pat eggplant dry and season on both sides with salt and pepper and coat it in the beer batter. Dredge the eggplant in reserved flour and slide into oil as coated. Fry, turning over frequently, until deep golden and cooked through, about 4 to 5 minutes.
  2. Transfer to a paper towel-lined baking sheet and keep warm in oven. Fry remaining fish in batches, returning oil to 375 degrees F between batches.
  3. Serve eggplant-fish with French fries.

  • Made this tonight – delish! So luxurious to eat something that tastes like a taste of old.
    One though: it is a lot of work for a weeknight dinner, but I cut up my eggplant at lunch time, so the marinating part was done. I would have liked a bit more fishy taste, so may try my dulse granules next time. Not sure what the difference is. 🙂
    I also wanted to try air-frying, but I think it’s too drippy to do that. Curious if anyone has succeeded.

  • Can I just say it seems awesome but can I just also point out it says ‘prep time 10 mins’ then it goes and says ‘marinate eggplant for 3-5 hour’s.

  • Sorry, I meant use the kelp granules for the filet o’fish recipe, just as it’s used in this recipe.

    Why do you need to call it FISH if it’s vegan? Why do you need to make substitutes of the real thing instead of creating something and calling it by what it is.. Beer battered AUBERGINE

      Wow…really? It is so irritating 2 see people come 2 someone’s VEGAN blog & ask the same question CLEARLY from someone who, like many, doesn’ t bother 2 think it out. Since u need it spelled out 4 u… SOME of us Vegans want the taste of meat & other animal products without the harm of actually having them. THIS fits the bill. How would we know what it was akin 2 taste wise if she did not indicate it was fake fish?

  • So I think you are just the greatest thing! I make all your stuff (you make this transition a friggin breeze) and I made this. Only difference was I breaded it with the panko crumbs that you used when doing the fillet o-ish! I also did it in bite sized pieces and dipped it in the vegan tarter and oh my god THE BEST
